You can sort of gauge what Google thinks it knows about you and opt out to Preference Based Ads here, which I did a long time ago. Of course I doubt that really shields you from that stuff as there are tons of data trackers out there.

Yes, ad networks build profiles based on searches from your IP address/browser cookies. Sometimes it just serves random ads.

The ads I get in Brazil are incredibly tame and boring. Except for a shampoo ad that almost crashed my system. HTML5 is indeed the new Flash, except it cannot be easily disabled.
