It has a Metacritic of 83, and got pretty great reviews across the board. In what possible way was the game 'snubbed'?
Because a sequel came too soon. Who wanted a DK game this soon? Will say that the new end Boss was pretty fun. Reminded me of K.Rule. The game also looks like a Wii title. The fruit stages were the only visually appealing parts. Retro Studios didn't do much to set the game apart from Returns. Rareware blew the lid off their sequels.
For one, it was probably too hard for them. If you've seen journalists try to play platformers, it's frankly astonishing how bad many of them are at them.
Secondly, it doesn't have the "hot" key features a lot of journalists look for these days to make their gaming-art connection. It hardly has a narrative. It superficially plays in the same way that Super Mario Bros. on NES does. It doesn't have some grand artistic virtues. It's not made by an indie developer.
Basically, it's not a "sexy" pick.

I'm sorry, I just have to vehemently disagree. DK: TF is one of the smoothest, tightest and most expertly crafted games I've ever played, it supports a variety of controllers and playstyles, and the music is GOAT-tier.

Came out too early in the year and was, at surface value, not a very "large and hyped" game akin to the likes of Mario Kart 8 or Smash. Timetokill generally nailed it.
Tropical Freeze is easily my favorite Wii U game to date and stands as a forerunner for my favorite 2D platformer of all time. It has everything I could possibly ask for - amazing game physics with character mechanics that always dictate the game play, dynamic levels that are incredibly varied with no one level feeling the same, an impeccable difficulty curve that always teaches you through its design and is demanding but fair, incredible atmosphere with visuals and settings that are incredibly unique to it's namesake and have rarely been tried in games like these, fantastic boss battles, and finally, a fucking kick-ass soundtrack.
Everything that DKC2 did to it's predecessor, DKCTF does to DKCR. I absolutely adore everything about the game and it borders on being a masterpiece to me. Talk all you want about "GAF overhyping" or not, Tropical Freeze legitimately made an impact on me.

I played through to the ice world then something else took my interest. For me i enjoyed it but the bosses were too difficult, too many secrets most very difficult to find, and the loading screens were really, really, really bad. Really good music though. 8/10 is what I would give it personally.

Prolly because it's a 2D platformer. I don't think it being on the Wii U is a "snubbing reason", if you look at Bayonetta 2 and MK8 and Smash which were put on pedestals left and right.
