That seems to say pretty clearly that they split up the main game into multiple parts because they wouldn't be able to cram everything into one game, rather than having one main game and a bunch of spin-offs.
They're adamant to recreate the full experience, and then some (there'll be some surprises for the people who are already familiar with the story), but apparently that requires splitting it up.
I'll reserve judgment until I see how they're going to handle this in terms of pricing and releases.

Nomura: VII in one work would turn into a digest. We judged that the remake must be full volume, so we decided to make [VII] multi-part.
Nomura: A subtitle for the VII remake would give the impression of a spin-off or sequel, so they avoided using one.
Nomura: If we make the characters reall, they'll look like real people and no one will recognize them, so we're aiming to balance.
Nomura: Advent Children models are too old, so they've been refining the graphics and balancing reality and deformation.
Aside from the CG shown at the beginning of the trailer, everything is in real-time. You can alter the camera angle during the train scene.
Cloud's appearance has to partially to do with the lighting and his pale skin. Nojima had said Cloud's sickly appearance is brilliant.

Nah, the people that actually liked the game enough to want it remade would've liked the old battle system because they liked the old game or herald it as the next coming of Christ.But many have asked for it to be more action oriented. Just because you think it's trash doesn't mean it is.

Changing that into something damn near unrecognizable to the original gameplay is a "who the fuck is excited for this" type move. Clearly it isn't people who say it's their favorite game, because if it's their favorite game they wouldn't want the core gameplay mechanics so drastically altered.
I assume you watched the trailer? Did you see anything in the trailer that looked like Final Fantasy VII gameplay to you? Did it strike you as the same thing you remembered in 1997 but with upgraded graphics? Or was it a wholly different game?
We can argue about why they're calling it Remake or why they're not making the remaster that most FFVII fans have been demanding all this time, but it's just not that game. It's something inspired by FFVII, along with Advent Children and FFXV and other factors and developer interests.
This new Final Fantasy VII product is a remake, same as how The Fly was remade and and Battlestar Galactica was remade and Red Dragon was remade (twice.) This new Final Fantasy VII product is not a remaster.
So to get up in arms over it being episodic, you're getting angry that this game which is 100% different gameplay from a game that shares its name with is now 120% different from it.
You and I both can be angry that it isn't what it isn't, but it isn't what it isn't. No need to get even angrier as it moves further away from the game that it isn't and instead becomes whatever it is that they're making instead.
