The guardian spirits are all build specific, really. Use the one that benefits your play style the most.
Personally, I recommend that everyone take a look through the ninjutsu and onmyo skill trees to add a few supplemental spells to their arsenal. It will make things significantly less difficult for you. Spirit, dexterity, and magic are all good stats to increase.
You really, really need to check out the ability trees.

I would suggest reading Usagi Yojimbo. 10.1/10 comic book with lots of sword fighting and yokai. There is even a special book dedicated exclusively to yokai.

Giant Centipede and the fact I'm always poisoned? I can't seem to find the sprout that emits the poison which makes this fight basically a timed one. I can't kill it before I die to poison.

Ki is stamina in Nioh. So it's a play on words that translates to Stamina is Key to victory. It can also mean something else depending on thoughts you may have

Yo no reason to be this rude you know not everyone on this board has English as their mother tongue or has years of experience with it as a second language.
Simple wordplays are not always the easiest to understand for people like that.
Use your brain.
You use your stamina to kill enemies, boosting your KI-score (shorthand for Killing Index). This can be used to buy extra lives in the in game store, as opposed to waiting 20 or so min to respawn.
