Mimolette is my absolute favorite cheese. I just recently learned that It's now banned from import because of the cheese mites..... Very Sad.

Also, I don't get all the hate for American Cheese Product. It's not actually cheese. Its an emulsified cheese pâté of sorts. Its fine for cheap use and accents to American dishes. Sounds less tasty because of the "cheese product" naming.

I think Mozzarella it's my favorite, because it's just great. Also, anyone have FONTINA? It's godly.

Everyone should go to their nearest fancy food place and get some good quality cheese. There's more to life than mozzarella and cheddar!

How's the Dutch " G" pronounced? Can you think of any English words that have a similar sound?

I just checked a few online dictionaries and they all do the goo-duh form. Never heard anyone say it like "loud" before.
You should visit Gouda. :)

(note: I don't really care how people pronounce it. As a Dutch speaking person it just sounds weird to me when you change the sound of the vowels)

I love Gouda cheese, btw! I'm mainly a fan of the white cheese family of cheeses. I also love Cheese Kurds, but they're not easy to find.

Also, I want to try some of that Gorgonzola. That looks so good.

does anybody know of good brands that use microbial/vegetable enzymes? Also any good ones that go on crackers/bagel chips. I've had brie and I forget what else, but not a big fan of brie's taste.

Yes!! I do. Cabot. It's so good. And vegetarian with no animal rennet.

My Wisconsin-side great-grandpa was in the hospital with serious constipation and digestive troubs once. He was like 85 or older at the time. Doc asked him about his diet and then concluded "well, I think you just need to eat less cheese, sir". His eyes misted over and he said "well I guess there's no joy for me left on this Earth; it's been a good run" and promptly died.

I choose to believe this

Maybe try adding some other stuff to go with the cheese?

I think I don't like melted cheese. But that can be that, because I still love things like Mac & Cheese, gratin dishes and fondue...

That's even more strange.

Heck, when I was younger, I used to just eat plain melted mozzarella with nothing else.
