I got a bunch of frozen meats in my 3 stuffed freezers (2 top freezer and a large dedicated freezer). I think some of them have been in there forever. I don't know how to eat them (unthaw, cook), so how do I eat them? What should I throw away?

How and how long do I unthaw them? There are some beef, pork and seafood. Some probably has freezer burn.

Also, what would go well with those meats? I got some Salsa, Guacamole, Pesto.

I also got some Black Pepper, Kosher Salt, Granulated Garlic, dried onions.

Does anyone have a recommendation for a food vacuum sealer? I could use one of those.

I will tell you right now if it's older than like 6 months to a year throw it away it's more than likely freezer burned and it will have a very stange taste to it, it will kind of taste like the freezer. I usually just unthaw frozen meat in the fridge before cooking takes about 24 hours or so depending on the size of what ya got.

Freezer burn does not render meat inedible but will adversely affect taste and texture. If you're gonna use the stuff, try making stew or chili which will cover that up.
