Since it's supposed to be more than a remake, a re-envisioning, I suspect Legend of Dragoon. That would make sense, being older and a popular game amongst the rpg fanbase. I don't see how it's Demon's Souls unless it's a lot of additional work and that they're changing a lot (unless they just meant doing something like adding the land of Giants archstone and finishing the ideas there, and perhaps improving bosses). At least for it to be called more than a remake and a "re-envisioning". That sounds like more than what you'd expect them to do for a game that was one PS3 and was functionally a great vision originally.
So I put my bet on Legend of Dragoon. It's a PS1 game after all and would warrant the "re-envisioning" branding (PS2 was remake, PS1 re-envisioning).
Legend of Dragoon is possibly the most generic jrpg to ever exist. It ticks all the trope boxes. And i say that as someone who likes the game.
It aint LoD.

That career page mentions low-poly models, so it's likely a PS1/PS2 game. As much as I wish it was Demon's Souls, it's probably not.
My next hope is Jet Moto.
