That shows how evolution wouldn't necessarily always take millions of years. Sometimes a major deformity/mutation would occur in a newborn, like that ape-pig, and if it was somehow working in his favor it would raise its chances of survival and raises the likeliness that such a mutation would happen again. In fact I think that this kind of drastic mutation/deformity probably accounts for a lot when it comes to the evolution of species, instead of very slow small changes, so small to the point where said small changes wouldn't do anything anyway.
Also, I think it's almost certain that this thing is somehow the result of a monkey/pig breeding, but no biologist would agree. But I think this is also another possible aspect that escapes us when it comes to evolution; it could be possible that sometimes, under certain random circumstances, different species managed to breed with one another and produce an offspring.

The pig had a monkey's head and longer rear legs.
China has a lot of monkeys too, so I presume some live in that area as well altho I'd have to check.
There is a different between having a mutation that allows one to shoot lasers out of their eyes, and enabling one to be impregnated by a different species.

That dr just looked at it or a picture of it, she/he didn't make a study/research on it.
