The dung beetle will be rolling around a dung ball, once you'd donated one.

edit - it's fossils/insects/fish/paintings, then the cafe is downstairs and the observatory is upstairs.

I don't see him in the insect room anywhere. I think the owl ate him.
Where do you get paintings?

The dung beetle I donated was in the second room, on the middle "island." You'll notice the dung ball rolling slowly

Paintings come from either Redd's tent, or Tom Nook has a couple that show up as spotlight items.

The only thing you can change in the saveroom is the beds. If you have a bed in your inventory you want to use, head to the foot of the bed up there and press "a" - it will ask if you want to change beds.

The room is meant to house up to 4 characters, if they all have double beds, then there is no room for furniture anyway.

Roll a snowball so it's a little bigger than they are when you first see them, and then come back later on (maybe 5-10 mins), and you might see it rolling around.
