Halo 3's Hornet

FTFY.

The Halo 3 Hornet controls are so good and I don't get why they had to change them in Halo 2 Anniversary. Feels a lot more sluggish.

I only played it for about 5 hours back in the day at a friends house, but I seem to remember the flying in Crimson Skies on OG Xbox being incredibly satisfying.

For actual controlled flight I loved the planes in Crimson Skies. I can't remember any specific aircraft from the game but I remember most of them being a joy to fly.

I miss Crimson Skies.

It may be cheating (literally), but the most fun I've ever had with a flying vehicle was to put on the "hovering cars" cheat in GTA3/VC/SA and hop in a tank. You could spin the turret around 180 degrees and then use the explosions to propel yourself through the air infinitely. I always had a ton of fun with it, particularly doing the vigilante missions and trying to swoop down to hit your target.

Was going to say the flying car cheat in San Andreas. So much fun to be had.

Crimson Skies was a great game. Definitely up their on my 'best planes' list. Thanks for the reminder. I just remember the aircraft on the cover

The Warhawk, nothing even comes remotely close for me. The insane maneuverability (hover mode + flight) made for some incredible dog fights and aerial acrobatics. I could do 50 laps around a huge map dueling with someone, flipping and thrusting and spinning and drifting and bobbing and weaving. It was so dynamic and empowering.

Outside of hard sim flight games, this is it. So many great dogfights spanning the entire map on Archipelago or through al the spires on Destroyed Capital. Definitely my favorite flying vehicle.

None of the other suggestions I see above have the fun of an attack helicopter in Battlefield 4. The banshee in Halo comes close.
