Small number of cars? Wut? Gran Turismo Sport has gotten tons of new cars since launch and now it has 324 of them. They'd be stupid not to feature them in GT7 (along with some new ones).Will be small number of cars at launch and updated all through the PS5 lifecycle, so could happen soon.
So with the exception of GT 5 which took them time due to PS3 being awful to develop for, They've released GT games consistently every 2 - 3 years like any other dev. Hence I don't know how this "PD are slow" came to be
Ironically Forza has been delayed. I'm pretty sure they said it will release this year but didn't. GT just doesn't operate on a 2 years iterative game release schedule. They make one big game and support it through most the gen.PD is the modern-day Working Designs known for their delays. In contrast to Turn 10 who this gen have made Forza 5, Forza 6 and Forza 7 to PD GT Sport.
No doubt Forza 8 will make it out before GT 7

I don't know about you guys, I love GT and all but I'm been craving for years for a good arcade racing on PS and Xbox. I'm getting tired of sims because I don't have more time to invest in them.

Content was sacrificed for quality in both GT3 and GTS.It wasn't just GT5 - GT6 was also promised to fix multiple aspects of the game via post-launch patches, but PD never actually delivered them, after some time (years) they just said it'll all be improved in the next GT, and when GTS came out, it had much, much less content than any GT ever before, with only Prologue titles that had less to offer. They are adding few cars or a track here and there and that's it, for some people that's enough, but the glory days of GT2/GT4 are undeniably long time gone. So while PD got much faster in releasing new GT games after the 5th, it comes at a cost of lesser content. Their current reputation is not there without a reason, they worked for it, and GT7 has a lot to prove.

No one can deny how barebones was GT Sport on its release date but i think that had more to do as a design decision (emphasis on e-sports) rather than having not the time to implement a full carreer mode. GTS had less content because literally all the car models were redone at (apparenly) 8K quality, mainly to prepare for this gen. It could've had a lot of cars at launch, but you'd have the 8K quality cars mixed in with the PS3 quality and the PS2 quality - probably not the best look.
Forza had this same issue when Forza 5 came out. Less content because they had to make new models for the new generation
But they said the exact same thing about GT5/6 cars, that they are already made with next-gen in mind, and when PS4 arrived, that started all over from scratch, so it makes you wonder if they won't do it again for PS5 despite their claims. Like I said, their reputation and people's lack of trust is fully deserved.
