Is cooking well a skill you're born with or just something you learn?

For those asking about taking classes.. I have an AS degree in culinary arts, and it was a very positive experience for me. A very expensive one, but a positive one nevertheless. It won't make you a master chef, but you get to learn (if it's a good school) from people who know food inside and out, you get to ask them questions, and most importantly, they really drill the methods into your mind, as opposed to recipes. It's mostly basics, but knowing the methods is very important.

some of it's skill that you learn, some of it's skill that you're born with.

if you have an inherently dense (ie. can't differentiate subtle tastes) tongue, then well don't expect to be able to impress guests....might get lucky sometimes and hit on a really bitching preparation, but more often than not, expect to cook something passable.

I'm not sure where you're going with this, but guys tend to have much more natural cooking ability in my experience. I surpassed all the women in my family in a couple months when I started cooking at around 14. The best cooks among my family and friends are an uncle on my mom's side and a male second-cousin in his early-'20s on my mom's side.

Anyone can cook well with the right instruction and enough practice, though.
Cookbooks should be enough for most people.

from my culture same thing.

Women are expected to cook but most of us Cantonese men (southern Chinese folk) are good cooks by nature.

I am usually my harshest critic when it comes to my cooking.

Cooking well can come from instinct, but cooking with confidence and technique comes only from repetition.
