I rarely ever used slo-mo for disarms. Sliding kick stuns most enemies and then they immediately melee afterward. That's when you disarm them. It's extremely quick and easy and doesn't break the flow of the game most of the time.
But yeah, the combat is the weakest part. The Time Trials is where the game really shines. Finding new ways to chip seconds off of your times and hit those goals is extremely fun and rewarding.
