for Cdn buyers, they've now listed that this May19 is US residents only on the Bundle page. Looks like i will have to wait and see what happens.

I think more "hard core" gamers would buy those since tons of ppls seem to dislike the 40GB one.
It's not just adding an EE, there are many other components associated with the EE. When looking at the circuit board of the 60GB vs. the 80GB (where the PS2 components are), there's a pretty big difference. And by adding more components and such, more current is used; therefore, higher wattage (basically more expensive) components are needed. Manufacturing a PS3 with GS + EE lost Sony around $240+ and even with a few cost reductions now, they'd still take a massive loss with it. That's why they ditched the SKU and it's never coming back (from what I do hear, the 80GB consoles used for the MGS4 may very well be MotorStorm bundles which didn't reach retail at the time).

Anyway, this bundle sounds pretty good and I want it myself. I do not have an issue with it being 40GB, just looks very awesome. :D

I can't tell if you're being sarcastic, but if you have experience shipping things, insurance usually doesn't cost anywhere near the retail value of what you're insuring. I don't pay 36,000 dollars to insure my car.
