I'm temped to think that the cheevos are easy on purpose so more people can buy it and be sucked into the world of Minecraft.
Game will appease both achievement whores and minecraft whores. It's a smart business decision. Achievement whores get easy point and minecraft fans get minecraft. Longitivty doesn't matter, when you can't trade the game in or sell it. Initial sale = ($_$)
My only complaint about achievements is the 3 most popular platforms for them are all separate. I wish there was some kind of universal gamerscore for PC, 360, and PS3. Maybe throw Blizzard games into that too >.>.

I'm guessing that will never happen because these systems are a surefire way to keep a lot of people commited to your next system. A lot of people will want to keep their Gamercards, Friendslist and Gamerscore in future console installments.
In the meantime you could use something like Raptr.
Every game and service is implementing their own achievements. It would be quite a feat to create a platform that covers them all, like something that also tells you have many Final Fantasy XIV and Kid Icarus achievements you cleared on top of everything else(which would be dozens of MMOs at this point I imagine).
Seeking out tough challenges can let you squeeze out additional fun out of a game and achievements is a way to service that. Given Minecraft is a boring, brain-dead sandboxy game only good for doing stupid shit with friends over the internet, it could definitely use some challenging achievements to spice things up.
Easy cheevos = more sales
Plenty of other ways you could do it as well... maybe effecting the game would be even cooler or special content and such.
Seems more like a simple crutch developers can lean on instead of actually giving you a reward for completing a crazy goal.
I imagine if devs "forced" players to do something that would normally only unlock an achievement (like say, a no death/restart run) they would go out of business.
