Do it. I've never had an experience quite like it.
A friend and I played through it recently and had moments that caused us to literally jump out of our chairs.

A feeling that can only be remedied by escaping to menu and taking a mini-break.
 
Playing Red Dead with a full posse for the first time. We were just ride in formation and talking and shooting people (good times) when suddenly you hear "BEAR, BEAR!" and half of use got downed by a trio of bears that came in from the side. Such sonderful chaos; people yelling and shooting wildly. Everyone died : )
 
I can't find a good picture/video of it, but in Star Wars Rogue Leader II for Gamecube, the Battle of Endor had me shitting my pants when I realized all the twinkly stars in the background were actually Tie-Fighters.
 
That moment in Medal of Honor (reboot one). I really thought I was going to die legitimately, as in not game over. Really interesting and cool in a way.

first time you fight the boss guy got me there where he starts swinging around taking you out in like 3 hits.
 
These giants in Everquest, that guy could ruin your last hours of XP if you were not paying attention. Any monster higher level than you was scary in EQ I guess ...

Soooo many times in World of Tanks. It probably breaks the rules since it's online, but quite often you'd be charging away only to find 3 or 4 more powerful tanks appear in front of you. You slam on the breaks but a 50 ton tank doesn't stop on a dime. You then slam down the reverse button while desperately firing at the enemy only to find your shells are just bouncing off their armour. A lighter enemy tank flanks around to your side or rear exposing your soft fleshy areas and a couple of rounds later you're a smoking heap of rubble.

It's the moments when you do manage to escape though that cause the most sweaty palms. ^_^

These dudes are way scarier than the Wallmasters, in part due to the fact they can take quite a few hits and have a horrible scream.

There's one room in the Earth Temple that's covered with fog...when you walk through to get the Treasure Chest, you can hear them moving around yet you can't see them. You think there's two or three, and avoid them as best you can. You open the chest, get the key inside, and then the fog clears...you just walked through a room with about seven or so of these motherfuckers.

And if you're going for 100%, you notice the compass shows there's a treasure chest in the room, but you can't see it. And then you realize you have to fight all these guys. It's not that hard, really, but it really gets your heart pumping.

The Wind Temple, if you go there first, may be even worse...you don't have any clue about the Floormasters, since they're only in here and the Earth Temple, and you go about and have Makar reach the top of one room and celebrate. Suddenly, you here a horrid scream, and four Floormasters pop out and drag Makar into the shadows, leaving you dumbfounded and partner-less.

Selecting a cursed card during shuffle time, followed by the sound of his chains was pretty scary the first time it happens.

My favourite chapter in the game, you also get the wyvern riders who exist purely to try and scare you since they wont actually do anything unless you go close. And then the standard stage boss can bolt across a good portion of the map with his horse brigade, considering the map type (arrive) I was firmly expecting him to stay rooted near the exit.
As far as Valkyria Chronicles goes I found the pincer attack from the two artillery tanks the most "Oh shit!" moment. It's like the ultimate false sense of security as you effortlessly capture that base with some overpowered assistance, then suddenly mortars in your face and infinitely re-spawning guards in a mostly open battlefield.

I fully agree here.

When the Black Knight appears, it's like "fuck, give him a wide berth of 6 spaces or I'm going to lose everyone." He's unkillable at that point, it's terrifying especially since you've spent time leveling your crew.

And that stage in VC was just mean.
