I know the answer is probably simple, but what is the difference between the JPN and ASIA versions of those games? Language differences? Will only play in certain machines? Nothing at all?

Asian versions gamewise are usually identical to the Japanese ones. Japanese menus and such unless it's a really special game like SotC where it gets the full translation.
The instruction manuals are in Chinese however and I think they have a quick start guide which translates the menu. I guess it depends on the game. Asian versions are also the same territory as the Japanese PS2, so you can play them only on those units (Unless your machine is modded or whatever)
