I agree, and it's not like a accurate bullet count display has to be elminated completly from the game for those that like it. Just like GRAW make stuff optional and let people decide how they want to play.
If you want to play realistic hardcore, have the option for a hardcore mode with a minimal HUD and no bullet count display along with iron sights only for pistols. If iron sights only for pistols is too extreme for you, disable the option and have a cross hair for when you fire your pistol.
