Simplest option is to take access to her keys away. If she wants to keep driving it (and you are ok with that), charge her mileage? Is she on your insurance? If not, that is a huge red flag.

Taking out a fuse that will disable starting the car is an option as well, will just have to figure out which one it is. That should be a lot easier than popping the hood each time you want to drive it.

I let a roommate borrow my car last month, they let the battery die.
Opened the hood in the rain, tried to jump it but somehow removed a plate on the battery shielding the rest of the electronics and fried everything.

Cost them $300 to fix my car. I sure as fuck didn't pay for that problem, but just saying OP. Keep the keys on you.

Might not be too bad depending on how old the car is.

Be careful if you top mounted battery cables. If you don't have really good contact when you put them back on you can have issues with charging and starting the battery. If they are side posts that screw in, you should be fine doing that. Truthfully, pulling the starter fuse would be a lot less work.
