I like this game a lot, but I actually avoid playing it sometimes because when I start playing it, I'll play it for longer than I initially want to. I just get sucked in (edit: nothing intended with that last sentence...).

Good for them. Well deserved and a nice chilled out game.

Got headaches while playing it on xbox one though. Not sure if it was the framerate or not but couldn't play for longer than a hour. Can't complain for free though.

I'm pretty sure Slime Rancher is not very similar to Minecraft.

This is confusing because it feels like a very early access game with really awful sound design and ux. You're always fighting back a completely obnoxious horde of thundering slimes with incredibly limited fps controls and an awful farm system where all the farm sections are really far apart.
Is the world really all that interesting to explore with the jetpack upgrades? Basically every review channel I follow has called the world boring.

Did some big minecraft channels do videos on it to have the chance to do a video on literally anything that isn't minecraft?

That's exactly how I'd describe it. I got it through humble bundle and liked the game but it didn't grab me. I jumped into the xbox one version yesterday and I actually think they did a nice bit of polishing up for that release and I may stick with it.
