Starting the God of War series today.

You did good by picking them up. GOW is my favorite ps franchise!! Amazing boss fights, epic scale, and gory as all hell! U will not be disappointed.
 
You can get through the games with very basic combat, but you'll have more fun with it if you remember to incorporate the various moves at your disposal. The combat really isn't the draw though, it's the set pieces and boss battles, and they're going to blow you away.

GoW 2 is my favorite because it has the best pacing and it was drop dead gorgeous for its time. It's still a good looking gaming considering how old it is and the hardware it was on.
 
1) You can usually start on Hard mode immediately if you need a challenge, with God Mode unlockable after beating each game once.
2) It's not super deep, it's meant to be a spectacle brawler. That's not to say you can mash blindly and win though (myself and friends have tried this). But if you're expecting this to be as deep as Bayonetta or so, you might be disappointed.
3) I personally love 2 the best. With 3 & Ghost of Sparta tied for second. GoW2 is probably the most well-paced story wise out of the entire series and gives you the wildest ride in and out of Greek mythology.

Additional advice: When I got my PS3, I hadn't played 3 or Ghost of Sparta prior. So I collected everything and played the series in chronological order. It turned out to be a huge and satisfying experience. YMMV, but it's definitely not a bad way to go.

Also, I assume you picked up Ascension as well with the collection? Yeah, go ahead and throw that one in the trash. It looks gorgeous, but that's about all it has going for itself.
 
I loved the original God of War for what it was. Still wish Jaffe stayed on and did the rest, but alas. It felt like it lost its soul after God of War 2.
All the games are a good, and beautiful, romp though. The Greek mythos provides built-in game mechanics that are all fun to use.

Also, the combat system isn't Devil May Cry levels, but it's way deeper than Square-Square-Triangle. Which funnily enough is the noob-tube of this game. Early, powerful move that makes new players feel powerful.
 
My only advise would be to play in this order:

GOW, GOWII, GOWIII, GOW:A

The PSP games are very dull in comparison, and you might burn yourself out on the series if you play them in between. Ghost of Sparta in particular is one of the most overrated games on GAF, and doesn't even come close to even the least good console title. If you finish the four main games and are still hungry for more, by all means play them afterward.

Listen to this guy.
Play in that order and only play the psp games after the console versions so you don't get burnt out.

Also I agree that ghost of Sparta is overrated, a lot. And this is coming from a huge gow fan
 
I preferred the Conan game to the GoW games, for a game with epic mythological creatures and epic boss battles Conan doesn't get nearly enough love.
 
Ghost of Sparta is my second favorite just because of how great it was translated to the big screen and how good it cleans up despite being a PSP title.

GOW3 > GOS > GOW1 > GOW2 > COO = GOWA

Brofist..... GOS is amazing, best story by a country mile and sets up some of the boss battle in 2 and 3

I've got a lot of love for Ghost of Sparta. I think I enjoyed it more than GoWIII even, which I played around the same time. My favourite weapon in the whole series was the Spartan spear + shield; loved the animations for it and it felt really fast and brutal. Wish that became a series mainstay weapon.

It was impressive to see these games on PS2. The combat is garbage though.

It's not that bad. The hyperbole here is OTT.
