I mean which weapon (or weapons) in gaming do you personally find are the most fun to use?

For me:

Shotguns in Destiny, they just feel awesome

Grenades in Perfect Dark with the secondary function on, meaning they bounce off any and all surfaces until they hit someone. Walk into room, throw grenade, run out of room, receive kill

Plasma Sniper in XCOM, I think it's the animation, that and the snipers are lethal then levelled up

I loved using the Bolt gun in Killzone 3. It's a gigantic nail gun with explosives that detonate seconds after hitting a target. Immensely satisfying to pin a Helgast soldier onto a wall and then explode him and two other enemies.

The shotgun in Hard Reset just might take the cake. It helps that the robot enemies break apart bit by bit in a very satisfying way too. The feedback in that game in general is pretty good.

The Farsight in Perfect Dark. Shoots through walls, OHKs, and locks on to a target. Yes it was ridiculous but fun.

Coupled with the Laptop Gun (you can deploy it as a drone gun anywhere), remote controlled missiles, mines, and pinball grenades, Perfect Dark is still one of the best multiplayer experiences around.

Except the Bio-gel-rifle thing. I know some players swear by it and are quite skilled with it, but I've hated that since OG Unreal 1. It always felt so underwhelming. You shoot and this boogery spunk stuff just flubbers out and sits on the ground. Hold RMB for bigger mess. Not my kind of weapon by a long shot. Flak Cannon, however, is quite godly.
