I feel like a lot of the alien races of Frieza's henchmen are by default stronger than Saiyans (as a race). Vanilla Frieza killed an entire planet of them. These guys have probably been training and discovering weird shit and techniques in remote worlds over the years too. Plus they're aliens, you can literally make up any bullshit gimmick and they're right up there with the SSJs.

Is it explained why Wish can't just bitchslap Freeza around? I thought he was magnitudes stronger than even Beerus, who himself bitchslapped SSJGod Goku.

Because those are Justice League stories, not "Superman" stories. You won't see Luthor or Supergirl defeating the big bad by themselves in a Superman story. A better comparison would be how it took Toriko and Luffy attacking at the same time as Goku in order to defeat the big bad in the DBZ x One Piece x Toriko crossover.

What confuses me is that in BoG Goku went Super Saiyan after being a God and it was just gold hair, and they made a point to say that he didn't notice because Super Saiyan no longer boosted his power. It should be noted that this info is coming from Gamefaqs and not Kanzenshuu, so it might not be true.
Probably no reason to. The very fact that Goku apparently just chills out with Whis while Vegeta is fighting makes it seem like they're using it as a training exercise if anything.
