Yeah that's the thing, I'm looking forward to the game because it's Zelda but watching footage I find that the moment to moment gameplay looks very bland and repetitive, refering to outdoor activities like collecting random loot, managing inventory, cooking food, raiding generic bokoblin camp #345, etc. This Zelda is specifically built around evoking the sense of adventure and it comes at the expense of tight level design and interesting gameplay scenarios, whereas past Zelda games focused on getting those things right first and then shoehorned story and adventure elements to varying degrees of success. In other words this Zelda has seen a shift of priorities, and it's the same deal with Mario Odyssey for me, but hey at least they were kind enough to include 100+ puzzle shrines and those do look stunning. Sandbox gameplay just isn't my style I guess.
