Part of the tension in those games comes from no pause mode. And how would it work with matchmaking? You could just smash the pause button every so often to interrupt invaders, like a big jessie.
Those games don't need pause buttons. Deal with it.
They could just make it available only in offline mode and when not in combat/no enemies aggroed.

is this even a real concern for the devs? i dont remember this issue being rampant. also, those are all single player games, there are far easier and more effective ways to cheat if thats the user's intention.
I don't know if that's intentional so much as a happy side effect for the hard core and exasperating for anyone who wants to never be offline. Though I think the fact the game is always active in that you can still run around, use the inventory, etc is probably a key factor for why it's not there in that it might require more of a careful reworking to ensure as few issues as possible, and when the AIM is to make it a persistently online game it's not worth it to them, fairly or not to us.

If it did, it would get abused.
Souls games save constantly. To pause, all you have to do is open the menu and find the "return to main menu" option. Now your game is paused.
Pretty much any game with online functionality won't let you pause. Division, Destiny, NFS, FFXIV etc etc.
Then there is the fact that none of the MP games can be paused, so that includes pretty much 80% of the games out there with a mode that can't be paused.
This thing about "I have a phone call", "There's someone at a door" or "I need to go take a piss" applies to all those games yet it only shows up for Souls like games.
I don't know about invasions, but I can attest that sitting at bonfires does not reset the spawns of enemies that may or may not be chasing you all the way back there.isnt sitting at a bonfire in souls games sort of a pause? can u get inviaded while sitting down at bonfire?

It bothers me Souls games don't have it even if your offline. Like really? Let me pause the damn game. Shouldn't have to quit out to the menu.

What about the lack of being able to quit the game when somebody has been summoned (either an invasion or a helper). That's frustrating when I have to quit the game go to work then the game moans that I didn't quit the game and autosave like I'm supposed to. Well, they're not really letting me, so how can I?

The games are not designed to be played offline, optionally. That can of course be achieved, but it drastically alters the experience for better and for worse.

You just make it so pausing isn't available once the system has found someone.
What about messages, phantoms etc? The game is in constantly accessing online features.. Fundamentally I don't think the system could handle a pause unless they redesigned it from the bottom up.
