One of the major things I liked about previous GoW games is the fact that the environnements are so diverse. From screenshots and footage I've seen this really isn't the case.

Of course we have not seen a lot.

If I had to voice a complaint it would be the difficulty level, because the demo was extremely easy and I hope the final product gives a hard setting from the start to provide a more challenging experience.

It's clear to me the demo was tweaked in order for people to play it from start to finish without ever losing, even if they sucked: you can hardly lose any health at all.
I wouldn't judge the standard difficulty of the game on this demo.

The 2nd game did, so I'm hoping they'll follow with this one.

I think he means that it's harder and more stuff happens on the second time through
