If by "overall" you mean art direction and how well it aged as well, I'd say Chrono Cross.

That stuff still looks AMAZING.

Tobal no1 or 2.

They knew what the hardware could accomplish effectively and tailored their look to match it. The game ran high res, smooth, and FAST.

I'd like to say Final Fantasy IX, but a lot of that was pre-rendered backgrounds, still the characters had a lot more detail compared to FFVII and FFVIII.

I'd say Ridge Racer R4, Vagrant Story, and/or Final Fantasy VIII (I think it looks better than IX even though IX is my favorite FF and VIII is my least favorite, credit where it's due and all that). Those three are pretty head and shoulders above everything else on the system imo.

For me it was Soul Reaver. Not only did it look great at the time, but you could instantly switch between two worlds. That blew my mind back then. There was no other game on PS1 that matched this feeling.

Vagrant Story for its stylish as hell cutscenes.
Chrono Cross with it vibrant color palette.
Legend Of Mana with such amazing storybook style animations.

Alien Resurrection is amazing, didn't know about the other games. Will definitely see if I can play them soon.

Vagrant Story is what came to mind. I think it holds up remarkably well, especially if you're actually playing through it and getting into it. Soon it just stops looking old and the style takes over. So good

IMHO, all things considered, probably Metal Gear Solid. For the reasons that I can't fully explain that game made the deficiencies of PS1 rendering work in its favor. While I was often disgusted by those, in MGS I fondly remember all the gritty jankyness, and didn't mind it even replaying the game recently.

Crash 3 and Ridge Racer 4 would be my next choices.

Although, now seeing it, the Alien Resurrection game looks pretty amazing. I've never seen that game before. Don't like the art direction at all though.

I will agree here. The battles also look sharper and run better than FFIX.

When bought the game again on PSN, I was pretty amazed at how well it held up.
 
I was amazed at the details in Vagrant Story and FFIX. Something like Crash Bandicoot 2 probably played to the strengths of the PS1 more though.
