I liked Broken Steel for FO3. With so many games you have the big battle, the bad guys are defeated and the credits roles. With the this DLC I like seeing how the world changed after the big battle and the effects and challenges its was having on the waste land. I also liked the fact the enclave just didn't disappear. I really wish they had really expanded upon it and I think its was a great missed opportunity.
 
Dark Souls - Artorias of the Abyss
Elder Scrolls IV: Oblivion - Shivering Islee (seriously. It's even better than the base game by leaps and bounds)
The Witcher 3: Blood and Wine
GTA IV - The Ballad of Gay Tony
Red Dead Redemption - Undead Nightmare

Final Fantasy XIV: A Realm Reborn - Heavensward
Dragon Age: Inquisition - Trespasser (whew hype for the 4th)
 
Asura's Wrath True Ending DLC. Capcom did us dirty by hiding the true ending behind a paywall, but it was hype as hell.

Witcher 3: Hearts of Stone
Probably one of the best video game stories I've ever played

Witcher 3: Blood and Wine
The story wasn't as good as HoS but the sheer amount of content this DLC offers is amazing. + Toussaint is just gorgeous and the ending was great.

Pretty much my experience. Entered Heart of Stone wanting to get to blood and wine ASAP but pretty quickly found myself enjoying it a lot.
 
New Vegas had such a strong suite of DLC expansions. Each one was excellent value in its own right. Even the 'weaker' ones were still really well done. Kudos to Obsidian!

Warhawk: Omega Dawn/Vaporfield Glacier and the dropship (LOVED these maps and the dropship added new dynamics to the game)

Witcher 3 Hearts of Stone/Blood and Wine combo is too good. Smashes the main game in some ways and gave me 50-60 more hours. Proper expansion packs rather than just DLC.
 
Shivering Isles and Point Lookout are the pinnacles, imo.

Knife of Dunwall/Brigmore Witches is another excellent 1-2 combo.

Edit - forgot about Blood and Wine. It's definitely up there with Shivering Isles.
