To answer your question, the biggest thing from what I've seen is none of the rest of those women are Mary Sue's...
It's the same reason Rey from Star Wars is not in there, because she also is a Mary Sue never really facing any adversity she can't overcome, never growing as a character because she never really was one she was just a female mouthpiece to basically shout how great females are without any actual thought put into them, she started out a little Bland in force awakens, but thanks to Last Jedi she is 100% Mary Sue.
While I am not a huge fan of all of these females above from Fantastic movies, they at least all have personality, a character Arc they have to go through to to achieve growth and become a better person, and an interesting story that they are attached to.
Now I hardly think Captain Marvel is nearly as big a failure as some people do, but from many people's mouths our own

included, it sounds like she's just yet another Mary Sue no creative writing, no good personality just a female being as good or in this case much better than her fellow men because "girl power".
What Hollywood and their current feminist movement seem to not understand however, is you can totally write a bad ass female(see above) into movies and still make them relevant, relatable, fun, and most importantly memorable.
Years from now when people talk about amazing women in the cinema they're not going to mention Ray because she's dull as dishwater oh, you're not going to mention the female Ghostbusters because they were in a horrible plot despite being great actresses.
I'm sad to say if things continue on their current course they're likely not going to mention Larson playing Captain Marvel either because it sounds like she was a badly-written character.
I can only hope she doesn't end up destroying Avengers Endgame, because it's already been explained to me the number of ways that Marvel screwed up Canon trying to force her into the past to rewrite story so that she was always a part of it. I agree the way Fury lose his eye is honestly kind of just Unforgivable, very disappointing for such an amazing character.
