From my experiences, corned beef > pastrami. But I think pastrami has a higher potential for amazingness, it just doesn't always reach it.

Strictly referring to sandwiches. Best beef overall? No. That would be a good steak.

Oh yeah, I've done that dish also! Sometimes I also through diced potatoes in as well.

My wife sometimes makes little corned beef patties using a bit of egg to make it stick better for frying. Gives it a little crisp bite to the edges.

Corned Beef is really good but the cut matters so much. Point cut is the way to go. More marbling leading to it being more tender and a nicer flavor

I never ate corned beef until I moved to Chicago. I actually rather like it. Horseradish helps. As for the hash, my folks love that stuff. Growing up post-war and getting US government rations is probably why. They love canned green beans and fruit cocktail top.
