After I died to them a couple of times I discovered a delightful way to cheese them to death. Normally I'd feel a bit guilty about employing these sorts of tactics, but those dudes were asking for it.
I used a Longbow and Poison Arrows, which you can buy from the merchant in the aqueduct near Firelink Shrine. After getting past the giant guards at the cathedral entrance and killing the first batch of the spear-wielding demons you'll notice there are two buttresses you can run down. One leads to the next platform with two more demons and the walkway that the knights are arrowing, and the other leads to a dead end.
Walk about halfway down the dead end buttress and you'll hear a knight start firing. You'll notice that sometimes his shots get caught on the railing of the buttress instead of hitting you. Line yourself up in a location where his shots hit the railing and then try to draw a bead on him. It's pretty hard to find the location where he can't hit you but you can see him, but once you find it take out your bow and line up a shot. Fire some cheapo arrows at him to draw a bead on him, and when you're confident you can hit him every time switch to your Poison Arrows. Hit him with two or three and he'll be poisoned. Wait. He'll take around 460 damage over time from poison then die.
Proceed to the end of the buttress, and do the same thing with the right archer. He's so far away that you'll need to aim above and to the left of him to compensate for the drop in your arrow trajectory. Again, use cheap arrows to get your aim, then switch to poison arrows. Just like lefty, once he's poisoned he's a goner. Wait for the poison to finish him, then proceed onward unsniped and unmolested.
Good luck. It takes some patience, but once you get the hang of it they can't touch you.

Using the item Humanity just adds one to your Humanity pool(The number next to your health). That's one of the great things about this game - The knowledge you gain by playing is infinitely more useful to your progression than the levels.wonderdung said:After 8 hours of messing around with an underpowered class I decided to reroll. Went human at the Undead Burg fire and proceeded to smash through Taurus and Gargoyles without dying until I accidentally pulled all 3 knights trying to get the basement key.
Feeling much better about this game now that I have a decent start. I'm like 5 levels below where I was on my first character and already farther progressed.
