Ryu Ga Gotoku Kenzan = Get it. If your Japanese is up to snuff, this is totally the type of thing you bought the system for.
PixelJunk Monsters - support Kyoto development! Seriously though, this game is really cheap and really addictive with fantastic music. Almost nobody who's played it hasn't enjoyed it.
Superstardust HD - this is the other PSN game that everyone digs. It's the PS3's answer to Geometry Wars and it's damn fantastic.
Resistance was surprisingly good, but you'll probably want to wait until the sequel hits in November, with Killzone 2 ahead of it. But if you're bored one weekend you should be able to find it kicking around chuko for 3000 or so, and frankly I thought the single player was better than Halo 3's by the end. Really cool weapons.
Uncharted is 12 hours of Gears Lite strapped to an 80s movie. If Japan had rentals, I'd recommend it as one. It's absolutely worth playing, something you should experience to see what your new box can do, but if you didn't have the cash for extra games when you bought the system then it's honestly not worth full price to you.
Motorstorm is excellent fun with some bad load times, but again, sequel hits this year so you'll probably be better off waiting. Also, no local multiplayer whatsoever sucks.
Ninja Gaiden Sigma is great, but it's the same game you've already played with some tweaks and extra levels with a slow boring character.
Heavenly Sword - the demo will tell you everything you need to know about it. The people I know who like it are into the visuals, but I find the gameplay mashy and repetitive, like if Dynasty Warriors stuck you in small confined arenas all the time and only let you use one character. It's also only about 6 hours long. It does have 5 star voice acting though, marvelous job with the cutscenes. I wasn't feeling it overall though.
Folklore is sorta decent okay action rpg fun, it's got charm.
Ridge Racer 7 - has a lot of similarity with RR6 on 360, but enough new stuff to recommend it if you're a Ridge fan.
Ratchet and Clank - I wasn't feeling it, but then this type of game's not my bag. The disco gun is cool though. Doesn't deviate too much from the R&C template, but the landscapes sure are pretty and they mix up the action with flying sequences etc. If you want an action platformer this is pretty much the only place to go.
Genji - there's a demo if you want to bore yourself for 10 minutes. The game had promise, but it's too slow and clunky to reach it. Also, bad camera.
Multi stuff - DMC 4, not sure if you've played it already. It's a great iteration of DMC, but it left me kinda flat in the end. the 8s-8.5s it was getting seem fair. This debate has been had many times before, but I still put Sigma at the top of the heap.
Call of Duty 4 - I don't go in for the realistic military stuff - or even previous COD games, for that matter - but they did a good job on this one. Pretty compelling, well done multiplayer.

Warhawk (did surprisingly well for Sony)
GT5 Prologue - The new defacto visual showcase.
