Haha, heard a terrible (though possibly true) rumor that Nintendo was considering remaking Diddy Kong Racing with Miis. And only Miis.
I don't really see why it's so inconceivable that a first-party NX game would use a middleware engine. Times have changed.

Oh yeah I remember that. Same logic went into that Wii Crush conversion of Project Hammer. I HIGHLY doubt that sort of thing would happen now. The fact they didn't make a new Wii-series on Wii U proves that phase is done, hell I'd even think they're done period since I don't think Wii Fit U, Wii Sports Club, nor Wii Party U did well at all.

A Mii racer would be the absolute worst-case scenario here.

I do believe Excitebike or ExciteTruck would make most sense given a "championship or career mode". Even then, I would suspect some other entity is helping them develop it.

I can definitely see it being co-developed by Retro since they have worked together with them in the past. The idea of Retro co-developing a racer may get some heat but Miyamoto did state that Retro is big enough to work on two projects at the same time.

Assuming it's not Retro, I wonder who would be helping them out. The developer scene in Minnesota is a bit limited these days, and I can't immediately think of any other developer Nintendo has worked with in the past that they can call upon to help them.

Diddy Kong Racing NX hype starts now
Career and Championship Modes don't sound very Diddy Kong Racing-esque.
More like Excite-something or F-Zero.

The Diddy Kong Racing 2 rumors made sense before Mario Kart 8 was conceived. Now that Mario Kart 9 will likely expand on the DLC/Amiibo all-star concept - there really isn't any place for Diddy Kong Racing 2 to exist. I mean, you remember it was basically supposed to be Diddy and a bunch of Kensuke Tanabe's mascots from a bunch of low selling games. So if the rumor was ever true, (i think it was a small prototype at best that turned into ExciteBots), it wouldn't make sense in 2017.
I never believed the rumor anyway because there is no way Nintendo was going to release Donky Kong Barrel Blast and then Diddy Kong Racing 2 on the Wii. People forget about the former.
