The magneto answers are crazy unless you are some lunatic that wants to go on a power trip. To use magneto's powers you have to show them, meaning the entire would will know what you can do and they will try to kill you. To do anything of note you have to physically attack/destory stuff. To convince people to do things for you, you will have to threaten them or agree to use your powers for whatever purpose they want.
With Prof. X no one needs to know anything, you can simply maniuplate any ones brain subtlety to get anything you want. Want money you can cheat in any form of gambling. Hell you can make some rich dude donate money to you. Want any girl on the planet, no problem. Want to change governments, take over a vote.

Professor X. Even if I was wheelchair bound, I'd just pull off some Inception level stuff when I got bored.

This is why Magneto is constantly depowered or nerfed and why Bobby will never amount to anything. It's only their potential power.
Professor X powers are more subtly broken. You can pretty much mind control your way into life in any way you want. You want to be fucking President and control the world, you fucking can. If not, it is not as if you can't use your powers for a less ambitious but still powerful existence. Like being the next Bill Gates. Or even far less ambitious than that.
With Magneto, sure you are extremely powerful but if you start using your powers you might paint a big target on you.

Exactly. You'd be crazy powerful as Magneto but you'd also need it because you'd have to be on guard at all times since people would want to study you or destroy you. With Prof X powers even if someone found out you could just mind wipe them.
Has this ever been addressed by just saying the Mutant gene is simply the same across all peoples, but for one reason or another they're expressed in a different way depending on the person, but that theoretically they all the same potential deep down. So those of the right circumstances, ie Omega level types, overcome their base characteristics and are able to expand their powers beyond their inherent traits. Such as ice or metallic manipulation.

Professor X's easily, doubly so if that throws in his intellect.
I also double checked and I was right in that he had telekinesis so he's got similar power in that territory as Magneto, I guess it's just with Magneto it's like he has much finer and potent control over metal than general purpose telekinesis.

Just because you can read everyone's mind doesn't mean you have to always be doing it. If I had that power (I'd like to think) I'd use it sparingly. A few pieces of information here and there can go a long way, and I'd probably never use it on people I have personal relationships with, without a good reason (probably coming from them). There's something valuable in an honest/trusting personal relationship, a lot of people would try to hold on to that on some level (of course not everyone, and not everyone that tries would be successful).

Great thing about Prof X is they don't even have to know and if they find out you can mindfuck anyone that could pose a problem. You would be a psychic ninja and no one would be the wiser.
No one would would ever remember the telepath has powers. Magneto could never live a normal life. Once the world sees the worldstar video of you making nickles dance in the streets, they're coming for you. You'll either have to enslave them or spend the rest of your life strapped to machines and being poked with needles.
