I mean, I'm happy to see Pauline again but there's something really off with her model here. They literally slapped her large cartoon porportioned head into a realistic and tall female body.
This is "drove off​ the cliff of the uncanny valley" levels of wrong.
This made me laugh more than it should!
I'm actually curious to see how she measures up with the other Mario characters.

Just knowing they were willing the pull her back out of the Mario vs Donkey Kong hell she was trapped in makes me super happy. I do hope this starts a trend of actually using some of the Mario characters Nintendo has just been sitting on lately (Daisy, Waluigi, and to an extent, Wario).
Imagine if they bring back Geno.

I thought DK Jr. was the father of the current Donkey Kong? Or did he grow up into the current Donkey Kong?

It was mentioned in OP that Pauline talks about how she fixed up the city after a unspecified massive disaster.
I'm assuming that massive disaster is something that happens at the beginning of the game.
My theory about the mario timeline is as follows. Your average ape lives around 35 years. Im going to assume the original DK in Donkey Kong was around 25 putting him at 50 Yrs in human years assuming the average human age is 70. This age makes sense since we learn dk was a dad in donkey kong jr. I then assume dk jrs age was 10 in his game (20 in human which makes sense with a 50 yr old father). Since mario's current age as specified by miyamoto is 25 im gonna say mario was 18 in donkey kong. He had just gotten a job as a carpenter in new donk city after graduating high school. While working under contract for a new construction project the events of the original donkey kong took place. In those 7 years since donkey kong, the original dk aged to the human age of 64 and dk jr (now just dk) to 34. This also implies all the games take place over a year 7 year span.Some people age better than others?

The pay for DK Jr.'s actor wasn't good, so he left the Mario crew; Rare had to retcon the lore by making Donkey Kong a grown up DK Jr.

Doesn't that game also have Baby Mario in it?
..Time travel? There's like four games that have this as a plot element, and all of them involve the baby versions of these characters.
The way I like to think about this stuff is that, as Miyamoto says, all Mario characters are actors. Baby Mario isn't literally Baby Mario but a separate actor who plays that part. Sometimes the actors like to get together and go Kart racing or play Tennis.

DK Jr. is currently planning his revenge on the rest of the Kongs for shunning him.
He will return in Retro's next DKC title as the main antagonist.
