Oblivion was a good port but it was released 1 year later and ported by another dev.
Fallout was released on the same day and the difference between versions were considerable. The 360 one just ran better...both versions were full of bugs sure, but I played a little of the 360 version (almost 30 hours) and never encountered a game breaking bug, while I had to delete my first save of the PS3 version because I was stuck in a quest less than 20 hours into the game.
New Vegas was developed by Obsidian, but ran on the same (gamebryo) engine as Fallout, and again the 360 version ran better.
While Skyrim runs in a new proprietary engine, Bethesda has never been know for their amazing coders, and the PS3 is notoriously more difficult to work with.
Don't get me wrong, if I buy Skyrim, I'm buying it for the PS3. It's been my main console since I bought it years ago. My 360 is gathering dust since Alan Wake was released. And I'm glad that PS3 impressions so far seems to be good, but forgive me if I'm skeptical until Digital Foundry does some comparison.
I really don't care for small graphic hitches, if I did I wouldn't have bought all my multi platform games on the PS3, I just want it to be playable as soon as I pop the disc in my system, instead of having to wait 2, 3 weeks for a patch to fix things up as I had to do with Fallout. :-(

Edit: Coworker reminded me of the autosave caused lag spikes, so the fix was to disable autosave in the options and that made it smooth.

Framerate is the only thing I care about in this game. Even Oblivion's GOTY ps3 version is not acceptable for me. I don't mind drops here and there but I cannot stand wandering around at 15-20 fps. It destroys the experience.

I'm the same way, i could have bought this for pc but chose ps3.. for the first hour i was kicking myself... fps below 30 all the time and janky controls. Playing on 360 now seems like a bit of a crapshoot, though. Lots of people seem to be experiencing the problem.
