The most satisfying mechanics in gaming

Tackling in Mario Strikers Charged.

The slow-mo combined with the sound fx really make it sound like you're actually pounding somebody into an electric wall.

mid/short range clean deagle headshot. Clutch well aimed awp shots. And a good team kill in dota (omnislash/blackhole etc)
 
I really like the active reload system in Gears of War and Mercenary Kings.

Active reload is fantastically satisfying.

The active reload is GOAT. really sad nobody else decided to copy it.

As others have said Active reload is amazing.

First post nails it once again. Not the biggest Gears fan but why everyone else hasn't stolen the active reload is beyond me.

Reloading is BORING. But hitting that perfect window always felt so good.

active reload was great for sp, obnoxious for mp. Dump and pump was annoying(even though I trashed people who did it).

Naruto Shippuden Ultimate Ninja Storm 3 Full Burst - Finish with Ultimate Jutsu
Halo Reach onward - assassinations
Starhawk - transformation
 
Tekken Ling Xiaoyu Storming flower, especially with a combo, beating up big dudes with a little girl never gets old.
WipEout 2097/XL - Using the airbrakes to optimally aim your ship before a bend and when using a neGon, steering perfectly through a bend without having to adjust your steering.
Also blowing up a competitor that is blocking your way.
I like the drifting mechanics of Mario Kart, SNES F-Zero and Ridge Racer.
Sony and Sega All Stars Racing Transformed - Chaining boost drifts
Split Second - Triggering explosions that crash your opponents.
Jumps in GTA.
 
Dodging to get Witch time in Bayonetta. Turned something I didn't really like (DMC) into one of my favorite games ever.
 
Street Fighter Third Strike- parry system

Super Mario World- run to fly with the cape

Halo- jacking vehicals!

Megaman X- Dashing and wall jumping

Ooh man so many!
 
Other posters mentioned most of mine, so I'll add:

- Stage moves in Def Jam
- PSE Burst in Phantasy Star Online 2
- Dash-jump into dash/sword slice in Megaman Zero (yeah, it needs to be repeated)
- Dodge mechanics in general
- Heavy attacks in Samurai Shodown
- Everything about Wilds High combat
- "Fever" in Gladiator Begins (the sound effect folllowed by your merciless chain of skills... yes)
- Reversals in Power Stone; catching a thrown item or swiftly side stepping/flipping over the opponents head feels so right
 
Parrying in pretty much any game, just-framed guards that nullify hit stun, immediate counter attacks after a just-frame guard, etc. All basically the same, just wanted to cover everything I can think of at the moment.

All amazing. I'm sure there are tons I'm forgetting.
 
Tomb Raider for the gymnastics. Mario 64 for the jumping and flipping. Superman Returns flying. Crackdown for the high jumping. Gta v face dive button. Mgs for the neck snapping and throat cutting.

The sword Rev mechanic for Nero's blade in DMC4, I loved timing the trigger after every swing to refill that Guage.

Definitely the lance in Mount and blade. Sooooooo good.

All of the hammers moves in monster hunter.
