The most satisfying mechanics in gaming

Smashing people with Forge objects in Halo 3.
Headbutting things as a Krogan in Mass Effect 3.
Sticking someone with a frag in Gears of War.

Mah nigga. I'd also add the power combos (biotics and tech powers) in ME3 as well.
 
Zandatsu while playing MGR on Revengeance difficulty.

Just the satisfaction of tearing through your enemies like they're made of paper... But knowing you are as well, and that at any moment one single instant of lapsed concentration means that no matter the fact your health is maxed, one slip up WILL kill you.

On Revengeance, Zandatsu is almost just about style, because if you get dizzied or even locked into a hitstun combo you're probably dead anyway.

That mechanic, or...

Ultra Combos. Specifically, baiting someone into an Ultra Combo and finishing a match they thought they had. Cheap, perhaps, but no matter how many thousands of times I've seen Ryu perform that Metsu Shoryuken on a hapless foe, it's still so damned satisfying.
 
All melee combat in dark souls. Best melee combat of any game ever. It feels realistic, there is weight to the attacks, and slow weapons are slow!
 
The bow in 3D Zelda. I absolutely adore sniping enemies from afar.
The Homing attack from Sonic. There are games where it's broken (Shadow, Heroes, and 06) but when it works I love it.
The roll jump from the Retro Donkey Kong Country games.
The triple jump from 3D Mario.
The spin move from Galaxy, especially when added to a long jump or triple jump.
The wall jump from 3D Mario.
The spin and bodyslam move from Crash.
 
Deadeye in Read Dead Redemption
Successful guard impacts in Soul Calibur
Diving (especially on a slope) in Max Payne 3
Combat maneuvers in Resident Evil 6
Landing a bound move in Tekken 6 or Tag 2. What a smash.
 
Skipped a couple of pages, but:

Mario's long jump, which is perhaps best felt doing it over the little planetoids in the Galaxy games.

The spin they added in NSMBWii. After playing that game I would flick my Wii Remote up to spin whenever I played SMB3 on the virtual console. Also did it playing NSMB on the DS and slammed the screen on my thumbs a bunch.
 
ONLY with surround headphones or speakers, Biotic explosions in ME. The bass distorting is incredible.

Just off of the top of my head, one of my personal favourites is the Meteor Smash from Smash Bros. Especially satisfying if it's the final KO of the match.
 
-Parrying in fighting games, ie Street Fighter Thrid Strike.
-Supers, since the dawn of Super Street Fighter II Turbo. Now most fighiting games have some type of super move per character.
 
Nothing beats backstabbing a ganker in the cat's forest in Dark Souls, and then parrying his ganking buddy host.

Watching blood splooge around as you kick your sword free of their salty corpse...

...It's borderline orgasmic.
 
Active reload is fantastically satisfying.

Agreed. It sounds stupid but ya.

I also LOVED the Red Dead Slow Motion.

Virtua Fighter comebacks. It is not a specific thing but specifically catching good fighters in a throw to win the match is amazing.

Everything that was included in Killer is Dead - The parry/counter/swift dodge>slash, max out level and choose reward all of it. Instant kills too.

Reflect Cancel combos in Vanguard Princess

DOA Counters

Gun/Snipe Rolling, Jump Rocket Launchers, Anchor Cancelling in Lost Planet 1-2 [Hearing that beep in general is satisfying.] Also shooting grenades most definitely. Along with Locking up a VS kill.

Wonderful 101 Weapon counters

Mario Combos [Referring to bouncing on multiple enemies consecutively for points.

SA2- Trick/Style System -Timed jumps and whatnot.

Sonic Unleashed Boost Drifting.

Garou - feint, brake, and Just defend

KOFXIII- HD Mode

KOFXII - Critical Counter. [Yes.... I actually liked this. Would like to see it again in the future except a bit more reasonable execution.]
 
Dodge Roll. I love it. Mentally, its very prominent in the original Kingdom Hearts

Then the bastards stripped it from the sequel. Madness.
 
For me it's just about everything in Gears - from the active reload to taking cover to mantling and the roadie run.
 
capturing those little fools with this net, and the sound and effects that happen afterwords. And the first experience of being able to run around and drive the R.C. Car at the same time, thanks to dual sticks.

Shiv kills online in The Last of Us. Especially when they see you and you literally just run around behind them. You know they're raging.

Dead Eye in RDR. Can save your life, makes you feel like a bad ass, even if it's just over glorified auto aim.

Mario Kart, going into second place on purpose, to avoid the blueshell. And it works.

Going fast as shit and nailing a curve in any racing game.

Tossing back thrown grenades in Uncharted 3 online, and aiming at a wall so the opponent can't reset the fuse once it actually hits the ground. So good.

Rock Band, full band, and everyone is on expert. And you're all borderline perfect.

Arkham Asylum/City/Origins. The part where you're Batman.
 
Melee in TLoU...never has wrecking someone against a wall with a nice knee to the face felt so meaty. Nothing beats getting into a fist fight with 2 people online and winning

Edit: dragons Dogma combat. From climbing cyclops to stab their eyes out to a perfect arrow shot to a fully charged great sword smackdown. So gut
