Jumping on heads to kill things. Never gets old.

Counter-parry combo real time combat, like in Arkham
build up-unleash huge energy, say, like the Summons in Golden Sun
headshotting unsuspecting players from miles away in games like BF2
planting bombs and make them detonate in unison, example: JC2

Quake 2's railgun feedback.
Quake 2's double jump tricks.
A perfect stunlock with a rogue in vanilla WoW.
Effectively using a rubber chicken with a pulley in the middle.
 
Cutting through 5-6 people with a messer sword in Chivalry Medieval Warfare.

This is even better when a steam sale hits and the servers are full of fresh meat.
 
Quake 3 - rocket jumps (well, quake 3 movement in general)
Zone of the Enders 2 - Zero Shift
Daytona USA - 4/2/4
Megaman X - dashing (especially when combined with wall jumps)
Phantasy Star Online - Quick,Quick,Heavy
 
One I haven't seen here yet is the combined aiming, shooting and moving to the next target in Sin & Punishment, especially the first game. The enemy explosions are always slightly delayed relative to when they've received maximum damage, just like in a lot of other Japanese manga and stuff. Once you get a feel for the exact amount of time your reticule needs to be on an enemy, you can just hold down the fire button and never let go as you methodically move from one enemy to another, systematically mowing them down. Every time an enemy explodes a second or so after you've already moved on to the next one it feels SO GOOD.

The Mario jump is pretty awesome

Mario's jump is indeed consistently great. I know the spring suit in the Galaxy games gets some hate on GAF, but once you master it, it's SO satisfying. The longer you press down A before letting go, the more condensed the spring becomes, and it feels like they modeled the rate of contraction based on actual spring elastics. It feels great :D
 
Mass Effect 3 Multiplayer

N7 Fury powers:

Annihilation Field + Throw + Dark Channel

She doesn't look very intimidating and can't take many hits but when you use those powers in the right order you send enemies flying and make groups of enemies explode while you run through them, the most badass way to fight.
 
Landing a parry in Dark Souls 1 but not the riposte that follows, weirdly enough. I absolutely love the booming sound that plays when you time that parry juuuust right. For me the big damage from the riposte is like a cherry on top.
 
I really like the active reload system in Gears of War and Mercenary Kings.

Also any kind of dodge/parry mechanic that awards you with something cool, like Bayonetta's Witch Time and the Metal Gear Rising's Parry.

First post nails it once again. Not the biggest Gears fan but why everyone else hasn't stolen the active reload is beyond me.

Reloading is BORING. But hitting that perfect window always felt so good.
 
Killing a target with the Air Assassination in every Assassin's Creed. And blinking from roof to roof in Dishonored with level 2 agile, that's also a mechanic right? Thought the finishing moves in Zelda TP were satisfying as well.
 
Strafejumping in quake/cs

surfing in cs

grappleshute in just cause 2

movement mechanics as skulk in ns2 before they were nerfed

good force feedback in a racing game

stake gun in painkiller

charge-intercept-intervene-spellreflect combination on warriors allowing you to bounce around like a pinball + reflect stuff in wow in tbc (before they ruined the mechanics in wotlk)

dodging stuns and spells with blinkdagger or other abilities in dota

shock rifle in UT

wipeout controls/physics once you get good at them and learn the tracks

driving on walls and ceilings in rollcage, which allowed you to find really really efficient racing lines through otherwise impossible corners


energy fighting in war thunder
 
traversal in GTA 5.... SO SATISFYING... the running, climbing, jumping, rolling, taking cover and just everything else about traversing the world in that game.

EDIT: no one said the Lasso from Red dead redemption? really?
 
Press Turn mechanic in Shin Megami Tensei Nocturne/Lucifer's Call. Godlike when you don't let Matador even touch you and get 8 moves per turn decimating the bastard.

But in action games it got to be Bayonetta's Witch Time.

Oh and the dual screen fighting in the World Ends With You. Once you get a grasp of it and execute perefect combos with Joshua... amazing stuff.
 
Parrying in MGR. Parrying in SF3
Bullet time in Max Payne.
Triple tech in Chrono Trigger.
I loved the flashlight combat in Alan Wake and the sand mechanics in Spec Ops the Line.
Also, the kill moves in Deus Ex Human Revolution were great.
Also also, EVERYTHING in The Punisher

Getting a perfect attack in Lost Odyssey is great too.
 
I really do like games when you can mix things or weapons. Like Gunstar Heroes.

And I really love it if two characters mix their powers, like Chrono Trigger.

Even better if those characters are used by different players, like Ultimate Marvel franchise.

Eating a long chain of ghosts in Pac Man Championship Edition DX+. (The lights! the sounds! the rumble! It sends you into a delirious high)
The active reload system from Gears of War
Headshots in binary domain (The feedback you get from your teammates is so satisfying. C'est Magnifique, mon ami!)
Captain Falcon's Knee of Justice
Boosting/Power shifting in F-Zero GX (YOU GOT BOOST POWER)
All-Out-Attacks in Persona.
 
Docking in elite dangerous with flight assist off.

Everything manual. Its a pretty complex since you need to manually toggle everything and make sure your ship is properly aligned to the spinning station.

The first time you do it, it takes you so long, but when you pull it off... man what a rush. Then, as you get better and better, you find you can start doing it with ease, shooting in and out of the station.

It never stops feeling rewarding.
