The level of graphics represented in that shot are actually doable with current generation XBox hardware. There is nothing particular about the low grass (maybe it deforms in motion), the trees and the draw distance are actually nothing special and the player model while skinned doesn't appear to benefit from shaders or a high polygon count.

You can clearly see a leap there

Exactly, people really overestimate how games look this gen.

Or compare it to Links, which is from this gen and looks pretty good in comparison.

I think these shots look far better than the earlier ones, have some really nice things going for it, but then again, a next gen Links game would have actual grass.
