Do we know if the textures in the Beta have improved from the "25%" in the Alpha? Also, how big is the Beta download?

I have a new Macbook Pro for work, and will probably be using that for the PC version.. should be more than up to the task

Exactly my plan. I think bootcamped Windows 7 64bit on my MBPR13 with Intel Iris 5100 will do just fine for some 900p mid settings on 40 fps. At least it runs Tomb Raider in 1080p at 30fps mid/high settings.
