Because until recently most TVs didn't output 5.1 or higher over their optical connections for devices connected by HDMI. My surround sound set only has 1 optical in and this is what I do. Have my PS3, Sky HD, DVD recorder etc all plugged into the TV through HDMI and take the TV's optical out to the receiver. No fuss and it all works great.

Nintendo uses standard SD cards and in this case even standard USB hard drives. Also, the ethernet adapter doesn't have to be by Nintendo as long as it uses a certain chipset.
