I don't think he's bullying Fieri here or "talking shit", they're just silly one-off comments, the kind he makes about lots of people. After reading Kitchen Confidential and watching all of No Reservations, seeing the kind of person he is and his style of humor, I'm pretty sure this is the case.

I understand that, my last name is super Italian too but I don't pronounce it like a pretentious doofus. He's not "Italian-American" he was born in Ohio. Selective accents are the worst. Either pronounce everything with an accent or none of it.
