If while playing with the scheme you suggest, you can be focused enough to remember what side the camera was last on, then you can be better prepared for switching sides. But I don't think in the intense action you'll be wanting to take note of and remember something like that.
I personally think the current scheme is more intuitive, and that this falls under you can't please everyone all the time, although really they could please everyone if they went with an option in the controls menu. I just think that the way it is works is better for everyone whether they realize it or not- but I could be wrong. I don't mean to get in your way of having more options, I just want you to see the advantages from my point of view and maybe then you'll appreciate the controls, since it's not really a common complaint that you can expect to be remedied. Again though, I'm not trying to stand in your way
As for recentering, I assume by your reaction there was a miscommunication? To turn a 180, even at the highest look speed, it takes far too long. If you just press the left stick so your character's face is looking in the direction you want, and then press L3, you'd be able to do an instant 180 turn without having to hold the right stick down for like an entire second.
