Gachi comes from what Ranked Battles are called in Japan, "Gachi Matchi", which is the playing format of this tournament and the Bon comes from the Traditional Japanese Obon Festival.

Probably not

Will I see my favorite teams from Splatoon Koshien?
Probably not, participants are chosen through lottery and out-of-region attendees are not privy to any special treatment. The winners, Ika Tama Kids will show up at some point and the Squid Research Lab will probably play in some capacity though.

The simplest way to find it on the app is to touch the Yellow NicoLive button on the top right when the stream goes live and it'll be on the list, might need to hit the more button on the bottom since there are a ton of Choukaigi streams going on.

Japan loves this, so I wouldn't worry. I'm honestly surprised that Nintendo isn't pushing Splatoon as hard in the West (Miitomo & frozen yogurt cross-promotion aside).
