Warhawk's servers are still up I believe. I went back to it a few times last year on different occasions.
Are GT6 servers still up? I will not be surprised if Sony kills them soon after GT Sport comes out (just like they did with GT5).

I bought Motorstorm 1 a week ago and popped the games in and got no updates.

You can check for it manually by highlighting the game in the XMB, pressing triangle and selecting "check for update."
If you're desesperate enough, Europe and Japan got a rerelease called Motorstorm Complete that includes all of the game's DLC and one new car along with the patch content baked-in.
Wasn't Motorstorm one of those goofy early PS3 games that required you to connect to multiplayer to download the patches (not sure)? The rumble patch for Resistance FoM is inaccessible because of that.

when I played FEAR 1 last year I checked and the servers were still up and there was like 3 people in a game

Time Trial mode can be found as a free download on the PSN Store, but according to the Store page you need to have the game updated to version 1.2. The patch should still be able even though the servers are decommissioned. You can check for it manually by highlighting the game in the XMB, pressing triangle and selecting "check for update." Other wise, go to the Game Data Utility and see what the latest version installed is as you might already have the update. Edit: Glowsquid's post makes me think some versions of the game might have the patch data on the disc, in which case you probably just need to download the Time Trial add-on from the store.
GT6 is still going. I got into a couple races in the past month when I've fired it up. I do agree that they'll probably shut it down not too long after Sport launches, though.
Regarding your first question, though, I also know for sure Uncharted 2/3, and, Killzone 2/3 are all still going.
Modnation Racers is still going strong! Unfortunately it won't work at all with a PS4 controller so I can't play it right now as my broken PS3 controller creates random inputs. I may buy a new PS3 controller just for this game. I really wish they would revive the franchise for the PS4. The LittleBigPlanet kart game never grabbed me like Modnation Racers did. Unfortunately it would have to be a new developer since UFG isn't around anymore. Now I'm sad.

The list I linked is Sony published games only. I don't know if there's a complete list out there, but this thread on PlayStation Trophies catalogs games with unachiveable trophies, which tends to overlap with server shutdowns. It's not going to be exhaustive because early PS3 games without trophies wouldn't show up, nor will games that still have achievables despite the multiplayer being offline.
