We were seeing lots of crazy particle effects, more impressive lighting effects, frame buffer effects up the wazoo (Depth of field, for instance, was extremely impressive at the time), and more. While it's true that a lot of games used field rendering to achieve 60 fps...there was plenty of others that did not (MGS2, for instance).
What the PS2 was doing back then was really pretty impressive for its time. I feel that the PS2 was more impressive in its day than the upcoming PS3 and 360 titles are today. When I first played The Bouncer (not so good), ZOE, MGS2, GT3, ICO, Silent Hill 2, and the rest of the bunch...I felt as if I was seeing things FAR beyond anything I had seen before (and I was). The PS2 pushed impressive visuals at 60 fps...which made so many of those titles so impressive.
I know what you are saying, though, and it's kind of a shame. There are so many things I'd be willing to sacrifice in order to see more 60 fps.
After reading all that, I'm glad I grew out of my 60fps over all else phase years ago.
