But how much does Ash weigh? In our world, 16 kg's (35 lbs) is pretty heavy to hold on one arm, but in his world it could be lighter

Yeah, and Larvitar may just be standing on a chair for all we know; the bad cropping of the photo makes it tough to be certain.

I never take the Pokemon weights and heights seriously. They are widely inconsistent between in the different Pokemon related works. Just like all the flavour text of the Pokemon' pokedex entries.

He didn't, Ash just went on his Pokemon journey and Oak gave him an encyclopedia.

He doesn't, the dex entries have nothing to do with Ash.
