I think he's changed the font for the entire phone looking at the Status bar as well. I haven't done that in a while so I can't quite remember how to change the font. Starting with a blank slate is great, the only thing is you have to find what you need. Another cool thing is you can pick your homescreen amount, right now I have 3.
If you want to go minimalistic, I'd suggest getting these widgets depending on what you want functionality wise:
-Pure Calendar/Smooth Calendar
-Music Mod
-SwitchPro widget
-Tajm and/or Digital Clock
-BattStatt

(Changing dock icons is easy in launcher pro, I don't use any icons on my homescreens...just widgets.)
For my wallpapers, I either go to "Wallpaper threads" for the Evo or search DeviantArt for big wallpapers. Android will allow you to crop what you need to.
