This isn't a comment on porn as much as sexuality, but there's a bit of a cultural difference at play here.

In America, it's safe to say a general turn on for men is women being really aggressive and in to the sex. Americans, as a general rule (there are obviously exceptions), tend to prefer it when a woman in bed or in pornography is incredibly desirous and enjoying of sex and the pleasure they get from it.

Which is not to say Japan doesn't. The cultural difference is that they enjoy enjoy the seeing women act prim and proper, refusing to admit they enjoy sex, until the act or the person eventually turns them. It is another take on the "I can't have anyone but you fantasy," wherein the man is so good that the woman can't find pleasure anywhere else.

The reason you tend to see this in porn more is because regular sex is boring for that audience. They want to me to place themselves in the male role and be told how great they are. Most sex within the country is not of the "try and turn her" variety.
